It was a reference to this incredible, terrible, terrifying weapon that we as humans have, which is the tongue. It can change your perception of the reality that your body is experiencing. It can make you believe in something that you don’t see.
The title was ultimately changed because it was "too long" and "too complicated," though I suspect Warner Bros. was just horrified by the thought of selling a $180M movie to audiences with a title that sounds like an eye-roll.
According to Iñárritu, the thinking behind "BLAH, BLAH, BLAH" was about how words can bend reality, warp perception and even be turned into weapons. Considering the film is a semi-troll job, they really should have kept that title.
